Ingredients (12 muffins)
•1/2 cups barley flour
1 1/2 cups of whole wheat flour
•1 Tbsp baking powder
•1/2 tsp salt
•1/2 cup coconut sugar
•1 cup non-dairy milk
•1/2 cup grapeseed oil (can use any light oil)
•2 tsp vanilla extract
•1 chia seed egg
•1 1/2 cups diced strawberries
•Preheat the oven to 400°F.
•Line a muffin pan with 12 paper cups or grease the pan.
•In a large bowl, combine flour, baking powder, salt and 1/2 cup of sugar.
•In a medium bowl, using an electric mixer, beat the milk, oil, vanilla and chia seed egg until blended.
•Add liquid mixture to flour mixture. Stir just until moistened.Do not over blend.
•Gently fold in strawberries.
•Spoon batter into pan.
•Bake for 25 minutes.
• After they are cool remove from pan.
