Chickpea Moroccan Tajine (Vegan)

Ingredients
1 onion chopped
3-4 cloves of garlic, minced
4 white potatoes chopped
2 sweet potatoes, chopped
1 carrots chopped
1 tsp cumin
1.5 tsp ginger
1 tsp paprika
1 tsp turmeric
1 tbsp. dried parsley
1 tsp salt
1 tsp pepper
2 tbsp olive oil
1-1/2 cup water
1 cup cooked chickpeas

Directions:
1. Heat the olive oil in a pot and add onions, garlic, and spices. Cook until fragrant (About 5 minutes)
2. Add the remaining vegetables and water to the pot and bring to a boil for about 15 minutes (or vegetables are tender.)
3. Check to see if the potatoes are soft. If they are, add the chickpeas and cook the tajine for 10 more minutes.
4. Serve with bread.
