1 large sweet potato
Coconut oil or olive oil
1/2 teaspoon salt
1/4 teaspoon ground red chili pepper
1/8 teaspoon black pepper
-preheat oven to 350 degrees C
– chop potato into medium sized wedges. (leave the peel on for extra nutrients)
-Add to a medium bowl with the potato wedges the next 5 ingredients (cooking spray, salt, ground red pepper, black pepper). Toss well to coat.
-Arrange potatoes on baking sheet in one single layer. place in the oven for 15 mins. turn potatoes on opposite side and bake for another 15 minutes or until tender and browned.
