Sweet Potato Chili (Vegan, Gluten Free)

2 tablespoon coconut or olive oil
1 onion, chopped
4 cloves garlic, minced
1/2 zucchini, chopped
3 stalks celery, chopped
1 green bell pepper
3/4 cup water
6-7 small sweet potatoes, chopped
1 1/2 cups tomatoes, chopped
1 can kidney beans, drained or 1 1/2 cup cooked kidney beans
2 teaspoons cumin
2 teaspoon chili powder
1/2 teaspoon nutmeg
1 teaspoon cinnamon

1/2 – 1 teaspoon sea salt

1. Saute the onion and garlic in oil until translucent or slightly golden. Add celery, pepper, and zucchini and cook until all vegetables are tender.

Add water, sweet potatoes, tomatoes, kidney beans, cumin, chili powder, nutmeg, cinnamon, and salt. Bring to a boil, and then lower to a simmer.

Simmer for 30 – 35 minutes, or until sweet potatoes are very tender. Add more water if needed.
