Strawberry Jam Muffins (Vegan)

1 cups whole wheat flour
1 cup barley flour
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup maple syrup
1 chia egg
3/4 cup almond milk
1/4 cup coconut oil (melted)
1 cup strawberry jam (homemade)

1. Preheat oven to 400 degrees F (200 degrees C)
2. In a large bowl, stir together the flour, baking powder, salt and maple syrup. Make a well in the center.
3. In a small bowl beat chia egg, milk and oil together. Pour all at once into the well in the flour mixture. Mix quickly and lightly until moistened, do not beat. The batter will be lumpy. Gently stir in jam.
4. Pour the batter into the prepared pan and bake at 400 degrees F for 20-25 minutes.
