Stewed Moroccan Lentils (Vegan, Gluten Free)

stewed lentils


2 cups brown lentils
1 medium white onion, chopped
3 cloves of garlic, finely chopped or pressed
4 tablespoons chopped fresh parsley
2 1/2 teaspoons cumin
2 1/2 teaspoons paprika
1 1/2 teaspoons ginger
1/2 teaspoon pepper
2 teaspoons sea salt
1/3 cup olive oil


Mix all ingredients in a pot. Add 8 cups of filtered water, and bring to a simmer for 1 1/2 hours or until lentils are tender and soupy.

Eat as a main meal or as a side with bread.
