2 cups cooked quinoa (boil 2 cups of water and add 1 cup of rinsed quinoa. Simmer for 12 minutes and fluff with a fork)
2 Tbsp green onion, chopped
2 Tbsp parsley, chopped or 3 tbsp dried parsley
1/2 cup grated cheese
1/2 cup bread crumbs or crushed saltines
1/4 tsp. salt
Cook quinoa and let cool to room temperature.
In a large bowl, slightly whisk eggs and add green onion, parsley, cheese, bread crumbs and salt. Mix well. Add 2 cups quinoa to your egg mixture until well combined.
Heat a large frypan on medium heat and drizzle a bit of olive oil or coconut oil in the pan. Using your hands, form patties making sure they are tightly packed, and place onto pan. Cook patties about 3 minutes on each side or until golden brown.
