Lentil Stew (Vegan, Gluten Free)

lentil stewIngredients:

3 1/2 cup water
1 lrg carrot, chopped
1 md. sweet potato, chopped
2 sm potatoes, chopped
1 white onion, chopped
1 can chopped tomatoes
4 cloves garlic
1 tbsp oregano, parsley, basil
1 1/2 tsp. salt
1 cup red lentil, rinsed (don’t soak them)

Directions:

Chop up all the veggies. Throw everything in a pot and cook for 40 minutes or until the vegetables are tender. SO EASY AND SOOOOOO GOOD!
