2 cups shredded carrots (2 big ones)
2 cups shredded beets (1 big one)
1/2 zucchini chopped
4 chopped green onions
1. Mi all of the vegetables together in a salad bowl.
2. Toss with your favorite dressing.
I used a Sesame Ginger Dressing. (not gluten free)
1/2 cup extra-virgin olive oil
1/4 cup balsamic vinegar
2 tablespoons braggs amino acid
2 cloves garlic, chopped
2 tablespoons honey
2 tablespoons minced ginger
1 teaspoon sesame oil
2 tablespoons of water
Combine all the ingredients in a blender and process until smooth.
