Barley Mushroom Spinach Salad (Vegan, Gluten Free)

barley mushroom spinach salad

Ingredients:
1 cup of cold cooked pearled barley (Boil 2 cups of water and add 1 cup of barley. Simmer for 40 minutes. Let barley cool)
2 cups of fresh spinach, chopped
2 cups of button mushrooms, sliced
3 green onions, chopped

Mix all of the ingredients together and toss with your favorite homemade dressing. Stay away from the store bought dressing. Full of preservatives AND sugar!

I used this Salad Dressing.
