Banana Blueberry Oatcake (Vegan)

2 cups oat flour (blend oatmeal in the blender for 2 minutes until it turns to a fine flour)
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3 mashed ripe bananas
1 tablespoon olive or coconut oil
1/2 cup milk of your choice
1 tablespoon of stevia
1 teaspoon vanilla extract
1/2 cup frozen blueberries
3 tablespoon shredded coconut

Preheat oven to 350 degrees F. Grease a 9×9 inch square pan.
Mix oat flour, baking powder, baking soda, and salt in a medium bowl and set aside.
In a separate bowl, beat mashed bananas, milk, stevia, vanilla extract, and oil until the consistency is smooth and creamy. Slowly add in oat flour mixture and mix until just combined.
Gently fold in blueberries. Pour batter into prepared pan and sprinkle 3 tablespoons coconut on top. Bake for 20-25 minutes or until knife inserted into center comes out clean. Cool 10-15 minutes and cut into thick slices.
